GREEN TEA AND STOMACH CANCER A major cause of stomach cancer stems from consumption of foods that contain N-nitroso compounds, a group of chemical substances containing one oxygen and one nitrogen atom. The best-known of the N-nitroso compounds are the nitrites, which are found in hot dogs and other types of smoked, cured meats. When mixed with gastric juice, nitrites can transform into nitrosamines, a particularly nasty kind of carcinogen that causes stomach cancer. Fortunately, green tea can help. Many lab, animal and human studies have shown that green tea extract can block the transformation of N-nitroso compounds into nitrosamines. Two other common causes of stomach cancer include chronic gastritis (inflammation of the lining of the stomach) and infection by the H. pylori bacterium, which causes gastritis and ulcers. Again, green tea may be able to exert a protective effect preventing or decreasing damage to the stomach lining that can precede the development of stomach cancer.
